So lately I have really been in a funk and I needed to find my way to get back to the real me. The one who doesn’t cry every day… who isn’t dependent on anyone… who doesn’t give a crap about what anyone thinks or says. I’ve been feeling so down lately and then I realized that I am the only one who can force a change. I can’t wait around for others to be there for me or help me get back to who I was. If I want to get back to the old me, I should just do it and if there are people who are holding me back or hurting me, then I am better off without them in my life.
So I got back to experimenting with my recipes again and finding new ways to make the same recipes but slightly easier as now with two toddlers running around, I don’t always have the time to make food the fancier way.
But I have come to find that even though I may not do things as fancy as a professional chef and maybe I may try to take the easy way out, my food still comes out tasting amazing.
So last night I made the twins fettuccine Alfredo from scratch. This is one of James’ favorite meals and he always looks and asks for “Moe?!” Meaning he’s ready for seconds! So here we go and leave a note in the comments on how yours tasted!
Fettuccine Alfredo – Quick and Easy Dinner
1/2 cup of butter
1 (8 oz) package of cream cheese
1 1/2 teaspoons of garlic powder
2 cups of milk
6 ounces of grated parmesan cheese
1/8 teaspoon of black pepper
1/8 teaspoon of Italian seasoning
1/8 teaspoon of oregano
Melt butter in a medium, non-stick saucepan over medium heat. Be careful not to burn your butter! Add cream cheese and garlic powder, stirring with a wire whisk until smooth.
Add milk, 1/2 cup at a time, whisking to smooth out any lumps. Stir in parmesan, pepper, Italian seasoning and oregano. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with pasta and serve!
